What is Lap Cheong sausage
There are various types of Lap Cheong sausages, ranging from those made with fresh pork to those made with pork and duck livers.
In this recipe, we’ll use the common Chinese sausage, also known as Lap Cheong in Cantonese.
Pork and pork fat are commonly used in this form of sausage. It’s hard, dry-cured, sweetened, and flavored with rose water, rice wine, and soy sauce.
Lap Cheong can be used in a variety of dishes, including fried rice, stir-fries, and traditional dim sum. Steaming and stir-frying are the most popular methods of preparing Chinese sausage.
You can purchase Lap Cheong sausages at any Asian grocery store or online at or It lasts for quite some time! After opening, you can keep it in the fridge for up to 2 months or freeze it for up to 6 months.

Ingredients: Serving for 2

  • 1 tbsp, olive oil
  • 1 beaten egg
  • 1 Carrot
  • 1 sliced onion
  • 1/4 lbs sliced roast pork
  • 4 raw shrimp
  • ¼ lbs chicken breast
  • 2 links Lap Cheong sausage
  • ½ lbs cooked rice
  • 1 tbsp soy sauce
  • 1 pinch black pepper
  • 1 tbsp Siracha
  • 1/2 tsp salt
  • 1 tsp, curry paste

Boil the rice along w/ Lap Cheong sausage and set the sausage aside to cool.
Get a pot of water to a boil and cook the chicken breasts for 6 minutes.
To avoid the breasts from cooking anymore, remove them and put them in a bowl of cold water. Chicken breasts should be cut into short strips.
Thinly slice the Lap Cheong
Carrots should be sliced.
Let’s cook
In a wok, heat the oil until it is very hot.
Cook for 20 seconds after adding the curry paste to the oil.
Pour the beaten egg into the wok and continually stir it. It makes no difference if you mix it in with the curry paste. Add chicken, shrimp, roast pork, and carrots and mix for a minute after the egg has cooked a little into a scramble (about 30 seconds).
Then, in the wok, add the boiled rice, shrimp, and fry for three minutes. If using cold or cooled rice, cook for 6 minutes and flatten lumps with a spatula.
Add thinly sliced Lap Cheong sausage .

Add strips of chicken breast.
Add sliced roast pork.
Season with salt, black pepper, and soy sauce to taste, and continue to fry for three minutes more. Serve with a slice of onion on top.
Add a pinch of Siracha to taste.
